Ingredients

2 large apples, peeled, cored, and diced (preferably Honeycrisp or Granny Smith)

1 cup all-purpose flour

1/2 cup sugar (plus extra for topping)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup applesauce (unsweetened)

1 large egg

1 teaspoon vanilla extract

1/4 cup milk

1 tablespoon melted butter

1/2 cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Apples: In a medium bowl, toss the diced apples with a sprinkle of cinnamon and a tablespoon of sugar. Set aside to let the flavors meld.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, nutmeg (if using), and salt.

Combine Wet Ingredients: In another bowl, mix the applesauce, egg, vanilla extract, milk, and melted butter until well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Gently fold in the diced apples until just combined. Be careful not to overmix; the batter should be thick but slightly lumpy.

Scoop and Bake: Using a cookie scoop or tablespoon, drop heaping spoonfuls of the batter onto the prepared baking sheet, leaving space in between each fritter.

Sprinkle with Sugar: Lightly dust the tops with extra sugar for a sweet crunch.

Bake: Place in the preheated oven and bake for 20-25 minutes or until the fritters are golden brown and a toothpick inserted into the center comes out clean.

Make the Glaze: While the fritters are baking, mix the powdered sugar with 1-2 tablespoons of milk in a small bowl to create a smooth glaze.

Glaze the Fritters: Once the fritters are out of the oven, let them cool for about 5 minutes. Drizzle the glaze over the warm fritters for a delicious finish.

Serve and Enjoy: These fritters can be enjoyed warm or at room temperature. Serve with a side of vanilla ice cream or a cup of coffee for the perfect treat!
