Ingredients

1 lb ground beef (or turkey for a leaner option)

1/2 cup breadcrumbs (Panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup balsamic vinaigrette (store-bought or homemade)

2 tablespoons olive oil

Optional: Fresh basil for garnish

Instructions

Preheat Your Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

Mix the Meatball Ingredients: In a large bowl, combine the ground beef (or turkey), breadcrumbs, grated Parmesan, chopped parsley, egg, minced garlic, onion powder, Italian seasoning, and a pinch of salt and pepper. Mix until just combined; avoid overmixing for tender meatballs.

Form the Meatballs: With wet hands, form the mixture into approximately 1.5-inch meatballs and place them evenly spaced on the prepared baking sheet.

Bake the Meatballs: Drizzle the olive oil over the meatballs to help them brown. Bake in the preheated oven for about 20-25 minutes, or until they are cooked through and golden brown on the outside.

Prepare the Balsamic Vinaigrette Sauce: While the meatballs are baking, pour the balsamic vinaigrette into a small saucepan over medium heat. Allow it to simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.

Coat the Meatballs: Once the meatballs are done, remove them from the oven and transfer them to a large bowl. Pour the warmed balsamic vinaigrette over the meatballs, gently tossing to coat them evenly.

Serve: Transfer the meatballs to a serving platter. Optionally, garnish with fresh basil and a sprinkle of extra Parmesan cheese before serving. Pair with spaghetti, a fresh salad, or as appetizers with toothpicks.
