Ingredients

12-14 cannelloni tubes

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup spinach, chopped (fresh or frozen)

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 can (28 oz) crushed tomatoes

2 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

2 tbsp olive oil

Fresh basil, for garnish (optional)

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to preheat while you prepare the cannelloni.

    Cook the Beef Filling:

      - In a large skillet, heat the olive oil over medium heat.

        - Add the chopped onion and garlic, sautéing until the onion becomes translucent.

          - Add the ground beef, cooking until browned, about 6-8 minutes. Season with salt, pepper, oregano, and basil.

            - Stir in the chopped spinach and remove from heat. Let it cool for a few minutes, then mix in the ricotta cheese.

              Prepare the Tomato Sauce:

                - In a saucepan, bring the crushed tomatoes to a gentle simmer. Season with salt, pepper, and a pinch of dried oregano. Simmer for about 10 minutes, stirring occasionally.

                  Stuff the Cannelloni:

                    - Using a piping bag or a small spoon, carefully fill each cannelloni tube with the beef and ricotta mixture.

                      Layer the Baking Dish:

                        - Spread a thin layer of the tomato sauce on the bottom of a large baking dish.

                          - Arrange the stuffed cannelloni in a single layer on the sauce. Pour the remaining sauce over the top, ensuring all the pasta is covered.

                            Add Cheese Topping:

                              - Sprinkle mozzarella and Parmesan cheeses generously over the top of the sauce.

                                Bake the Cannelloni:

                                  - Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

                                    Serve:

                                      - Allow the cannelloni to rest for 10 minutes before serving. Garnish with fresh basil if desired.
