2 cups fresh mushrooms, sliced (cremini or button)

1 cup cooked quinoa (or rice for a different texture)

1 cup spinach, chopped (fresh or frozen)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup grated cheddar cheese (or your favorite cheese)

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup breadcrumbs (optional for topping)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and tender, approximately 5-7 minutes. If using frozen spinach, add it now and cook until heated through. If using fresh spinach, wait until the next step to add it.

      Mix the Base: In a large mixing bowl, combine the cooked quinoa (or rice), sautéed mushrooms, cooked spinach, cream cheese, sour cream, cheddar cheese (reserve some for topping), dried thyme, paprika, and season with salt and pepper.

        Assemble the Casserole: Transfer the mixture into a 9x13-inch baking dish, spreading it evenly. If desired, sprinkle the remaining cheese on top. For an extra crunch, sprinkle breadcrumbs over the cheese.

          Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is lightly golden.
