3 cups cooked egg noodles

2 cups cooked, shredded chicken (rotisserie chicken works well)

1 cup canned cream of chicken soup

1 cup sour cream

1/2 cup chicken broth

1 cup frozen peas and carrots (thawed)

1 cup shredded cheddar cheese

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1 cup crushed cornflakes (for topping)

2 tablespoons melted butter (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Noodles: In a large pot, bring salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Mix the Casserole Base: In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, dried thyme, salt, and pepper. Mix until well combined.

        Combine Ingredients: Add the cooked noodles, shredded chicken, peas and carrots, and 3/4 cup of cheddar cheese into the mixing bowl. Gently fold everything together until the noodles are well coated with the sauce.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Top and Bake: In a separate bowl, combine the crushed cornflakes with melted butter, then sprinkle the mixture evenly over the casserole. Top with the remaining 1/4 cup of shredded cheddar cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.
