    Prepare the Apples: Wash and dry the apples thoroughly. Using a mandoline slicer or a sharp knife, slice the apples very thinly (about 1/8 inch thick). Remove any seeds and the core of the apple slices.

      Toss with Lemon Juice: In a large bowl, toss the apple slices with lemon juice. This prevents browning and adds a slight tartness to balance the sweetness.

        Mix Cinnamon and Sugar: In a small bowl, combine the ground cinnamon, sugar (if using), and a pinch of salt. Mix well.
