1 cup cottage cheese (preferably low-fat)

4 large eggs

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup bell pepper, diced (any color)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt (or to taste)

1/2 cup shredded cheddar cheese (or cheese of your choice)

Fresh herbs for garnish (optional, e.g., parsley or chives)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the cottage cheese, eggs, garlic powder, onion powder, black pepper, and salt. Whisk until smooth and well-blended.

      Gently fold in the chopped spinach, cherry tomatoes, and bell pepper until evenly distributed.

        Grease a baking dish with a little olive oil or cooking spray to prevent sticking.
