8 pieces of chicken (legs or thighs preferred)

1 cup buttermilk (for marinating)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon dried oregano

1 teaspoon dried thyme

Cooking spray or olive oil for drizzling

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 2 hours, preferably overnight, to ensure maximum flavor and tenderness.

    Prepare the Coating: In a separate shallow dish, combine the all-purpose flour, panko breadcrumbs, dried oregano, dried thyme, and a pinch of salt and pepper. Mix well.

      Preheat the Oven: Preheat your oven to 425°F (220°C). Place a wire rack on a baking sheet to allow the chicken to cook evenly and get crispy.

        Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing any excess to drip off. Dredge each piece first in the flour mixture, then in the panko mixture, pressing gently to adhere the crumbs.

          Arrange on the Rack: Place the coated chicken pieces on the prepared wire rack. Lightly spray or drizzle with olive oil to encourage browning.

            Bake the Chicken: Place the baking sheet in the preheated oven and bake for 35-45 minutes or until the chicken is thoroughly cooked and the coating is golden brown and crispy. Internal temperature should reach 165°F (75°C).
