Baked Feta Pasta with Cherry Tomatoes

400g (14 oz) penne pasta

200g (7 oz) block of feta cheese

500g (1 lb) cherry tomatoes, halved

4 cloves garlic, minced

¼ cup extra virgin olive oil

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for garnish

Freshly grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the pasta: Cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

      Prepare the baking dish: In a large baking dish, add the halved cherry tomatoes, minced garlic, red pepper flakes, dried oregano, olive oil, salt, and black pepper. Toss to combine.

        Add the feta: Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil on top of the feta.

          Bake the dish: Bake in the preheated oven for about 25-30 minutes, until the tomatoes are blistered and juicy, and the feta is soft and golden.

            Combine: Remove the dish from the oven and use a fork to mash the feta into the roasted tomatoes, creating a creamy sauce.

              Mix in the pasta: Add the cooked penne pasta to the baking dish. Toss everything together until the pasta is well-coated with the feta and tomato mixture.
