Ingredients

6 large eggs

1 cup milk (whole or almond milk)

1/2 cup heavy cream

1/4 cup brown sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

6 cups day-old bread, torn into bite-sized pieces (preferably brioche or challah)

1/2 cup maple syrup (for drizzling)

1/2 cup chopped fresh strawberries or blueberries (optional for topping)

Powdered sugar (for dusting, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin with cooking spray or butter.

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

Add the Bread: Gently fold the torn bread pieces into the egg mixture until they’re fully coated. Let it sit for about 10 minutes so the bread can absorb the mixture.

Fill the Muffin Tins: Using a spoon, evenly distribute the soaked bread mixture into the greased muffin tin, filling each cup almost to the top.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and the centers are set.

Cool and Serve: Allow the baked French toast muffins to cool in the tin for about 5 minutes. Carefully remove them from the tin and place on a wire rack.

Garnish: Drizzle with warm maple syrup, top with fresh strawberries or blueberries, and sprinkle with powdered sugar, if desired.

Enjoy: Serve warm as a delicious breakfast or brunch option for family and friends.
