2 pounds baby potatoes (red or yellow)

1/2 cup unsalted butter

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the baby potatoes thoroughly and cut them in half if they are larger than a golf ball. If they are small, leave them whole for a beautiful presentation.
