Ingredients

4 medium zucchinis (zoodles)

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon red pepper flakes (optional for heat)

1 cup grated Parmesan cheese

½ cup breadcrumbs (Panko or regular)

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Zoodles: Using a spiralizer or a julienne peeler, turn the zucchinis into zoodles. Place them in a colander and sprinkle with a little salt. Let them sit for about 10-15 minutes to release excess moisture.

Make the Garlic Butter: In a small bowl, mix the melted butter, minced garlic, salt, black pepper, and red pepper flakes (if using). Stir well to combine.

Dry the Zoodles: After resting, gently pat the zoodles with a paper towel to remove any excess moisture.

Combine the Ingredients: In a large mixing bowl, toss the dry zoodles with the garlic butter mixture until well coated.

Prepare for Baking: Spread the zoodles evenly on a baking sheet lined with parchment paper.

Add Toppings: Sprinkle the grated Parmesan cheese and breadcrumbs evenly over the zoodles.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the zoodles are tender and the top is golden brown.

Serve: Once baked, remove from the oven and let them cool slightly. Garnish with fresh parsley and serve with lemon wedges for an extra zing.
