Baked Garlic Herb Flatbread Bites

Ingredients
  

2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon sugar

1 teaspoon salt

3/4 cup warm water (about 110°F)

2 tablespoons olive oil (plus extra for brushing)

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried basil

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Dough:

    - In a large bowl, combine the flour, yeast, sugar, and salt. Mix well.

      - Gradually add the warm water and 2 tablespoons of olive oil to the dry mixture. Stir until a soft dough forms.

        Knead the Dough:

          - Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

            - Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Prepare the Garlic Herb Mixture:

                - In a small bowl, mix together the minced garlic, dried oregano, dried basil, dried thyme, red pepper flakes (if using), and a pinch of salt.

                  Shape the Flatbread:

                    - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

                      - Punch down the risen dough and turn it out onto a floured surface. Divide it into 10-12 equal pieces.

                        - Roll each piece into a small ball and flatten it into a disc about 1/4-inch thick.

                          Add the Toppings:

                            - Place the flattened discs onto the prepared baking sheet. Brush each disc generously with olive oil.

                              - Sprinkle the garlic herb mixture evenly over the tops of the dough discs. If desired, add a sprinkle of grated Parmesan cheese for a cheesy variation.

                                Bake:
