Ingredients

4 halibut fillets (6 oz each), skinless

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped

2 tablespoons lemon juice

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 tablespoons unsalted butter, melted

Lemon wedges, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Panko Mixture: In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to ensure even distribution of the ingredients.

Prepare the Halibut: Rinse the halibut fillets under cold water and pat them dry with a paper towel. Place the fillets on the prepared baking sheet.

Coat the Fish: In a small bowl, whisk together the lemon juice and Dijon mustard. Brush generously over the top of each halibut fillet. This will help the panko crust adhere.

Add the Panko Topping: Press the panko mixture onto the halibut fillets firmly, ensuring an even coating over the top. Drizzle the melted butter lightly over the crusted fillets for added flavor and crispiness.

Bake the Halibut: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the fish is opaque and flakes easily with a fork. The crust should be golden brown and crispy.

Serve: Remove from the oven, and let the fillets cool for a couple of minutes. Serve hot with lemon wedges on the side for an extra citrus zing.
