Ingredients

For the Cornbread Tenders:

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 cup buttermilk

1/4 cup honey

2 large eggs

1/4 cup unsalted butter, melted

1/2 cup corn kernels (fresh, frozen, or canned)

For the Honey Butter Glaze:

1/4 cup unsalted butter, softened

2 tablespoons honey

1/2 teaspoon cinnamon (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and granulated sugar. Whisk until well blended.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, honey, eggs, and melted butter until fully integrated.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold in the corn kernels until just combined. Do not overmix.

Shape the Tenders: Using a spoon or an ice cream scoop, portion out the batter into tenders on the prepared baking sheet, shaping them into strips or nuggets, about the size of chicken tenders.

Bake: Bake in the preheated oven for about 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

Prepare Honey Butter Glaze: While the tenders are baking, in a small bowl, mix the softened butter with honey and cinnamon (if using) until well combined.

Glaze the Tenders: Once the cornbread tenders are out of the oven, brush them generously with the honey butter glaze while they are still warm.

Serve: Allow the tenders to cool slightly before serving. They are perfect on their own or paired with a side of chili or a fresh salad.
