4 salmon fillets (about 6 ounces each)

3 tablespoons olive oil

4 cloves of garlic, minced

Zest and juice of 1 large lemon

1 teaspoon Dijon mustard

1 teaspoon honey (or maple syrup for a vegan option)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper or lightly grease it with cooking spray.
