1 medium head of cauliflower, cut into bite-sized florets

1 cup grated Parmesan cheese (freshly grated for the best flavor)

1 cup breadcrumbs (panko works great for extra crunch)

2 large eggs

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

½ tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Olive oil spray or 2 tbsp olive oil

Optional: Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easier cleanup.

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets with a sprinkle of salt and pepper. Toss them well to coat.

      Make the Breading Mixture: In a separate bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, and dried Italian herbs. Adjust seasoning with more salt and pepper if desired.

        Prepare the Egg Wash: In another bowl, beat the eggs until well combined. This will be your binding agent for the Parmesan crust.
