4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease with cooking spray.

    Prepare the Chicken: If the chicken breasts are thick, consider cutting them in half horizontally to create thinner cutlets for even cooking. Pat them dry with paper towels to ensure a crispier crust.

      Bread Crumb Mixture: In a bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Mix well until evenly combined.

        Egg Mixture: In another bowl, whisk together the eggs and Dijon mustard until smooth.
