Ingredients

4 tilapia fillets

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup mayonnaise

Juice of 1 lemon

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Parmesan Mixture: In a mixing bowl, combine grated Parmesan cheese, panko breadcrumbs, chopped parsley, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to combine.

Prepare Tilapia: Pat the tilapia fillets dry with paper towels to remove excess moisture. This helps the crust adhere better.

Make the Sauce: In a small bowl, mix the mayonnaise with the lemon juice until well combined. This will be your adhesive for the Parmesan crust.

Coat the Fillets: Using a brush or spatula, spread a thin layer of the lemon-mayo mixture over the top of each tilapia fillet.

Add the Crust: Generously sprinkle the Parmesan-panko mixture over the coated side of each fillet, pressing gently to ensure it sticks.

Bake the Tilapia: Place the coated tilapia on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and the crust is golden brown.

Prepare to Serve: Once baked, remove the tilapia from the oven and let it sit for a minute. Serve with lemon wedges on the side for an extra citrusy kick.
