Baked Parmesan Zucchini

4 medium zucchinis, sliced into 1/4-inch rounds

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a large bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper. Mix well.

      Drizzle the olive oil over the zucchini slices and toss to coat evenly.

        Dip each zucchini slice into the breadcrumb mixture, pressing down lightly to ensure they are well coated.

          Arrange the coated zucchini slices in a single layer on a baking sheet lined with parchment paper.

            Bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender and the tops are golden brown and crispy.

              Remove from the oven and let cool for a couple of minutes. Garnish with freshly chopped parsley before serving.
