1 cup grated zucchini (about 1 medium zucchini, squeezed dry)

1 cup all-purpose flour

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/3 cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

1/2 cup rolled oats

1/2 cup chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans) (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Prepare Zucchini: Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture with a clean kitchen towel or paper towels. Set aside.

      Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt until well combined.

        Mix Wet Ingredients: In a large mixing bowl, combine the brown sugar and granulated sugar. Add the vegetable oil, egg, and vanilla extract, and whisk together until smooth and creamy.
