Ingredients

1 pound Brussels sprouts, trimmed and halved

3 tablespoons extra-virgin olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey or maple syrup

3 cloves garlic, minced

Salt and freshly cracked black pepper, to taste

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

1/4 cup grated Parmesan cheese (optional)

Toasted walnuts or pecans for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Brussels Sprouts: In a large mixing bowl, combine the trimmed and halved Brussels sprouts with olive oil, balsamic vinegar, honey, minced garlic, dried thyme, salt, and black pepper. Toss until the Brussels sprouts are well-coated with the mixture.

Arrange on Baking Sheet: Spread the seasoned Brussels sprouts out in a single layer on a large baking sheet. Make sure they are not overcrowded to ensure even roasting.

Roast in the Oven: Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through. The Brussels sprouts should be tender on the inside and caramelized on the outside.

Add Cheese (Optional): If you're using Parmesan cheese, sprinkle it over the Brussels sprouts during the last 5 minutes of roasting for a delicious melty finish.

Garnish and Serve: Once roasted to perfection, remove the Brussels sprouts from the oven and transfer them to a serving dish. If desired, top with toasted walnuts or pecans for added crunch.

Final Touch: Drizzle any remaining balsamic glaze over the top for extra flavor and enjoy!
