1 lb baby carrots (or regular carrots, cut into uniform pieces)

2 tbsp extra virgin olive oil

3 tbsp balsamic vinegar

1 tbsp honey or maple syrup

2 cloves garlic, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tsp sea salt

½ tsp freshly ground black pepper

¼ cup crumbled feta cheese (optional)

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: If using regular carrots, wash, peel, and cut them into uniform pieces. If using baby carrots, simply wash them and set aside.

      Make the Marinade: In a large mixing bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), minced garlic, fresh thyme, sea salt, and black pepper until well blended.
