Balsamic Steak Gorgonzola Salad with Grilled Corn

1 pound flank steak

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper, to taste

4 cups mixed salad greens (arugula, spinach, romaine)

1 cup cherry tomatoes, halved

1 cup fresh corn kernels (about 2 ears of corn)

1/2 cup Gorgonzola cheese, crumbled

1/4 cup chopped fresh basil

1/4 cup red onion, thinly sliced

Instructions
 

Marinate the Steak: In a mixing bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper. Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, ideally 4 hours or overnight for maximum flavor.

    Grill the Corn: Preheat your grill to medium-high heat. Husk the corn and brush it lightly with olive oil, then sprinkle with salt. Grill the corn for about 10-15 minutes, turning occasionally, until charred and cooked through. Remove from the grill, allow it to cool slightly, and then cut the kernels off the cob.
