2 ripe bananas, mashed

1 ½ cups rolled oats

½ cup almond butter (or any nut butter of your choice)

½ cup mixed berries (fresh or frozen; blueberries and raspberries work great)

¼ cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

½ teaspoon cinnamon

½ teaspoon baking powder

Pinch of salt

Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine wet ingredients: In a large mixing bowl, mash the ripe bananas thoroughly. Then add almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

      Add dry ingredients: To the banana mixture, add the rolled oats, cinnamon, baking powder, and salt. Stir until just incorporated.

        Fold in berries: Gently fold in the mixed berries, taking care not to mash them too much. You want some whole berries for texture and flavor bursts in each bite!

          Form the bites: Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, flattening them slightly for even baking. Leave about an inch of space between each bite.
