3 ripe bananas, mashed

1/4 cup unsweetened yogurt (or sour cream)

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup melted butter

1 teaspoon vanilla extract

1 1/2 teaspoons active dry yeast

1/4 teaspoon salt

2 1/2 to 3 cups all-purpose flour

For the Filling:

1/4 cup brown sugar, packed

1 tablespoon ground cinnamon

1/4 cup chopped nuts (walnuts or pecans, optional)

2 tablespoons unsalted butter, softened

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1 cup powdered sugar

1/4 cup milk

1 teaspoon vanilla extract

Prepare the Dough: In a large mixing bowl, combine the mashed bananas, yogurt, granulated sugar, brown sugar, melted butter, and vanilla extract. Stir until well incorporated.

    Activate the Yeast: In a small bowl, dissolve the active dry yeast in warm water (about 110°F) and let it sit for about 5 minutes, until foamy. Add this to the banana mixture.

      Mix in the Dry Ingredients: Gradually add the salt and flour, starting with 2 1/2 cups and mixing until a soft dough forms. If the dough is too sticky, add more flour a tablespoon at a time until manageable.

        Knead the Dough: Transfer the dough to a floured surface and knead for 5-7 minutes, until smooth. Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Make the Filling: In a small bowl, mix the brown sugar, cinnamon, and chopped nuts (if using) until well combined. Set aside.

            Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.

                        Prepare the Cream Cheese Glaze: While the rolls are baking, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.

                          Glaze the Rolls: Once the cinnamon rolls are out of the oven and slightly cooled, drizzle the cream cheese glaze over the top.
