Ingredients

For the Dough:

3 ripe bananas, mashed

1/3 cup melted butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

For the Cinnamon Filling:

1/2 cup softened butter (for spreading)

1 cup brown sugar, packed

2 tablespoons ground cinnamon

1/2 cup chopped walnuts or pecans (optional)

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/4 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

Make the Dough: In a large mixing bowl, combine the mashed bananas and melted butter. Mix well. Add in granulated sugar, brown sugar, egg, and vanilla, and stir until smooth.

Add Dry Ingredients: Sprinkle the baking soda and salt over the wet mixture and stir to combine. Gradually add the flour and fold it in until just combined. Do not overmix; a few lumps are okay.

Prepare the Filling: In a small bowl, combine the brown sugar and cinnamon for the filling. Set aside.

Roll the Dough: Turn the dough onto a lightly floured surface and gently roll it out to a rectangle, approximately 12x18 inches in size.

Spread the Butter: Spread the softened butter over the surface of the dough, ensuring an even layer.

Sprinkle Filling: Evenly sprinkle the cinnamon-sugar mixture over the buttered dough. If desired, add chopped nuts on top.

Roll Up: Starting from the longer side of the rectangle, carefully roll the dough into a tight cylinder. Pinch the seams to seal.

Slice Rolls: Using a sharp knife, cut the rolled dough into 12 equal pieces. Place the rolls into the prepared baking dish, spacing them evenly.

Bake: Bake in the preheated oven for about 25-30 minutes, or until golden brown and cooked through.

Prepare the Glaze: While the rolls are baking, whisk together the softened cream cheese, powdered sugar, milk, and vanilla extract in a separate bowl until smooth.

Glaze the Rolls: Once the rolls are out of the oven, let them cool for about 5 minutes, then generously drizzle the cream cheese glaze over the warm rolls.

Serve & Enjoy: Serve warm, and enjoy the delightful combination of banana bread and cinnamon rolls!
