Ingredients

3 ripe bananas, sliced

1 box (14 oz) graham crackers

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 small box (3.4 oz) vanilla instant pudding mix

2 cups milk

1/2 cup chopped nuts (optional, for garnish)

Chocolate shavings or cocoa powder (optional, for garnish)

Instructions

Prepare the Pudding Layer: In a medium bowl, whisk together the vanilla instant pudding mix and milk until smooth. Set aside for a few minutes to thicken.

Whip the Cream: In a large mixing bowl, use an electric mixer to whip the heavy cream until it begins to thicken. Gradually add the powdered sugar and continue whipping until stiff peaks form. Then, add the vanilla extract and mix well.

Combine Layers: Gently fold the prepared pudding into the whipped cream until completely combined. You’ll have a light and fluffy cream mixture.

Assemble the Cake: On the bottom of a 9x13-inch baking dish, place a single layer of graham crackers. Spread half of the cream mixture over the crackers, followed by a layer of banana slices. Repeat the process with another layer of graham crackers, the remaining cream mixture, and the rest of the banana slices. Top with a final layer of graham crackers.

Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the graham crackers to soften.

Serve: Before serving, you can garnish the top with chopped nuts and chocolate shavings or a dusting of cocoa powder if desired. Cut into squares and enjoy!
