2 ripe bananas, mashed

1 cup unsweetened almond milk (or any milk of choice)

1 scoop vanilla protein powder (plant-based or whey)

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 tablespoon cornstarch

1 tablespoon coconut oil

2 tablespoons dark rum (optional, for the Foster flavor)

1/4 cup walnuts, chopped (optional)

Whipped cream (dairy or non-dairy, for topping)

Instructions
 

In a medium-sized bowl, whisk together the mashed bananas, almond milk, protein powder, maple syrup, vanilla extract, and cinnamon until smooth and creamy.

    In a small saucepan, combine the cornstarch with a splash of almond milk. Stir until fully dissolved. Then, pour in the remaining almond milk-banana mixture and cook over medium heat, stirring continuously until the pudding thickens (about 5-7 minutes).

      If using, stir in the dark rum and keep cooking for another minute. Remove from heat and let it cool for a few minutes.

        While the pudding is cooling, melt coconut oil in a separate skillet over medium heat. Add the chopped walnuts and toast for about 2-3 minutes, stirring frequently until they are lightly browned.

          Fold the toasted walnuts into the pudding mixture, reserving a few for garnish.

            Pour the pudding into serving dishes and refrigerate for at least 30 minutes to set.

              Serve chilled with a dollop of whipped cream on top and sprinkle with additional toasted walnuts. Enjoy your decadent yet protein-packed treat!
