1 lb fresh salmon fillet, skin removed

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper, to taste

1/4 cup mayonnaise

2 tablespoons sriracha (adjust for spice preference)

1 tablespoon honey

1 teaspoon lime juice

Chopped green onions, for garnish

Lime wedges, for serving

Prep the Salmon: Cut the salmon fillet into bite-sized cubes (around 1 inch). Set aside.

    Set Up the Breading Station: In one bowl, mix the flour with garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

      Coat the Salmon: Dip each salmon cube first into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the panko breadcrumbs. Press gently to ensure the breadcrumbs stick. Repeat for all pieces.

        Fry the Bites: In a large skillet, heat enough oil over medium-high heat for frying (about 1/4 inch deep). Once hot, add the salmon bites in batches, being careful not to overcrowd the pan. Fry until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

          Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sriracha, honey, and lime juice until smooth. Adjust seasoning to taste.
