Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 medium red onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon honey

Salt and pepper to taste

1 tablespoon balsamic vinegar (optional for finishing)

1 teaspoon red pepper flakes (optional, for heat)

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the sliced red onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add Peaches: Add the sliced peaches to the skillet along with the honey and red pepper flakes (if using). Sauté gently for 2-3 minutes until the peaches begin to soften.

Create the Sauce: Pour in the chicken broth and bring to a gentle simmer. Scrape any browned bits off the bottom of the skillet to enhance the flavor. Allow the sauce to cook for about 5 minutes until slightly reduced.

Finish the Dish: Return the cooked chicken to the skillet and nestle it into the sauce. Sprinkle the chopped basil over the top. Allow everything to heat through for another 3-4 minutes.

Optional Touch: Drizzle with balsamic vinegar for an added layer of flavor just before serving.

Serve: Plate the chicken and spoon the peach and basil sauce over the top. Garnish with additional fresh basil if desired.
