Basil Pesto Pasta

Ingredients
  

2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

1/3 cup pine nuts (or walnuts for a twist)

2 cloves garlic, minced

Salt and pepper, to taste

12 ounces pasta of your choice (spaghetti, fettuccine, or penne)

1/2 cup cherry tomatoes, halved (optional, for garnish)

Fresh basil leaves, for garnish (optional)

Instructions
 

Prepare the Basil Pesto:

    - In a food processor, combine the fresh basil leaves, grated Parmesan cheese, pine nuts, and minced garlic.

      - Pulse until the ingredients are coarsely chopped.

        - While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the bowl a few times.

          - Season with salt and pepper to taste, and blend again until fully combined. Set aside.

            Cook the Pasta:

              - Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.

                - Reserve about 1 cup of pasta cooking water, then drain the pasta.

                  Combine Pasta and Pesto:

                    - In a large mixing bowl, combine the hot drained pasta with the prepared basil pesto.

                      - Toss well to coat, adding a bit of the reserved pasta water if necessary to reach your desired consistency.

                        Serve:

                          - Serve the pesto pasta immediately, garnished with halved cherry tomatoes and fresh basil leaves, if desired.
