Basil Ranch Chicken and Salami Quesadilla with Avocado

2 cups cooked chicken, shredded

1/2 cup salami, chopped

1/2 cup ranch dressing

1/4 cup fresh basil, chopped

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 ripe avocado, sliced

1 tablespoon olive oil

Salt and pepper to taste

Optional: salsa or sour cream for serving

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped salami, ranch dressing, and chopped basil. Season with salt and pepper to taste. Stir until well combined.

    Heat the Pan: In a large non-stick skillet, heat the olive oil over medium heat.

      Assemble Quesadilla: Place a tortilla in the skillet. Spread half of the chicken, salami, and ranch mixture evenly over one half of the tortilla. Sprinkle a mix of mozzarella and cheddar cheese generously on top of the filling. Fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Cook the quesadilla for about 3-5 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted. Repeat this process for the remaining tortillas and filling.

          Serve with Avocado: Once cooked, remove the quesadilla from the skillet and allow it to cool for a minute. Slice it into wedges and serve with fresh avocado slices on the side.

            Optional Dip: For an extra kick, serve with salsa or sour cream on the side.
