Ingredients
  

1 sheet of frozen puff pastry, thawed

2 medium tomatoes, diced

1 cup fresh basil leaves, chopped

1 cup mozzarella cheese, shredded

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: Balsamic glaze for drizzling

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out creases and slightly expand its size. Cut it into 2-inch squares.

      In a mixing bowl, combine the diced tomatoes, chopped basil, shredded mozzarella, olive oil, garlic powder, salt, and black pepper. Mix well to integrate all ingredients.

        Place a tablespoon of the tomato-basil mixture in the center of each puff pastry square.

          Fold the corners of the puff pastry squares towards the center to create a pouch and pinch to seal.

            Arrange the puff pastry bites on the prepared baking sheet, leaving enough space between each.

              Optional: brush the tops lightly with a bit of olive oil for a golden finish.

                Bake in the preheated oven for 15-18 minutes or until puffed and golden brown.

                  Remove from the oven and let cool slightly before serving. Drizzle with balsamic glaze if desired for added flavor.
