1 cup cooked chicken, shredded (rotisserie chicken works great)

1/2 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh or canned)

1/4 cup chopped fresh cilantro (for garnish)

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 tablespoon olive oil

Optional: sliced jalapeños for heat

Preheat the Oven: Preheat your oven to 425°F (220°C) for a crispy flatbread base.

    Prepare the Chicken: In a mixing bowl, combine the shredded chicken with 1/4 cup of BBQ sauce, garlic powder, and smoked paprika. Mix well until the chicken is evenly coated in the sauce.

      Prepare the Flatbreads: Drizzle olive oil over each flatbread and rub it lightly with your fingers to distribute it evenly. This will give the flatbread a nice crisp when baked.

        Assemble the Pizza: Spread the remaining BBQ sauce evenly over the flatbreads, leaving a small border around the edges. Distribute the BBQ chicken mixture evenly on top of the sauce.

          Add Toppings: Sprinkle the shredded mozzarella cheese over the chicken. Next, add the sliced red onions and corn evenly across the flatbreads. If you like a spicy kick, add jalapeños at this stage.

            Bake: Place the flatbreads on a baking sheet and transfer them to the preheated oven. Bake for about 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
