BBQ Chicken Flatbread with Red Onion & Mozzarella

1 lb boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

4 flatbreads or naan bread

1 tablespoon olive oil

1 medium red onion, thinly sliced

2 cups shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

Fresh cilantro or parsley, for garnish

Salt and pepper, to taste

Instructions
 

Prepare the Chicken:

    - Preheat your grill or grill pan over medium heat. Season the chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper.

      - Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.

        Sauté the Onion:

          - In a skillet over medium heat, add a little olive oil. Once hot, add the thinly sliced red onion. Sauté for about 5-7 minutes until softened and slightly caramelized. Remove from heat and set aside.

            Assemble the Flatbreads:

              - Preheat your oven to 425°F (220°C). On a baking sheet, lay out the flatbreads or naan. Spread a generous amount of BBQ sauce over each flatbread, leaving a small border around the edges.

                - Evenly distribute the grilled chicken pieces over the sauce, followed by the sautéed onions. Top with shredded mozzarella cheese, making sure it covers all the toppings well.

                  Bake the Flatbreads:

                    - Place the assembled flatbreads in the preheated oven and bake for about 10-12 minutes or until the cheese is bubbly and golden brown.

                      Garnish and Serve:

                        - Once out of the oven, remove the flatbreads and let them cool for a minute. Garnish with freshly chopped cilantro or parsley. Slice into pieces and serve warm.
