Ingredients
  

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp ground cumin

1 tsp chili powder

½ tsp paprika

Salt and pepper, to taste

4 large flour tortillas

1 cup vegetable oil (for frying)

Optional toppings: sour cream, salsa, and chopped cilantro

Instructions
 

In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.

    Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onion is translucent and the garlic is fragrant (about 2-3 minutes).

      Stir in the ground cumin, chili powder, paprika, salt, and pepper. Mix well for about 1 minute to let the spices bloom.

        Remove the skillet from heat, then fold in the shredded cheddar and Monterey Jack cheeses until well combined. Let the filling cool slightly.

          Lay a flour tortilla flat on a clean surface. Spoon about ¼ of the beef and cheese mixture onto the center. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a burrito shape. Repeat with the remaining tortillas and filling.

            Heat the vegetable oil in a large frying pan over medium heat until hot but not smoking (about 350°F/175°C).

              Carefully place the chimichangas seam side down in the hot oil, frying them in batches to avoid overcrowding. Cook until golden brown and crispy, about 3-4 minutes per side. Use tongs to turn them carefully.

                Once cooked, transfer the chimichangas onto a paper towel-lined plate to drain excess oil.

                  Serve hot with your choice of optional toppings like sour cream, salsa, and chopped cilantro.
