1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes with juice

1 can (15 oz) kidney beans, rinsed and drained

1 cup uncooked elbow macaroni

2 cups beef broth

1 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

      Add the chopped onion, minced garlic, and diced bell pepper to the skillet. Sauté for about 5 minutes, or until the vegetables are softened.

        Stir in the diced tomatoes (with juice), kidney beans, uncooked elbow macaroni, beef broth, Italian seasoning, salt, and black pepper. Bring to a gentle boil.

          Reduce the heat to low and cover the skillet. Let it simmer for about 15 minutes, stirring occasionally, until the macaroni is cooked and the liquid has thickened slightly.

            Transfer the beef and macaroni mixture into a greased 9x13-inch baking dish.

              Evenly sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top.

                Cover the dish with aluminum foil (to prevent excessive browning) and bake in the preheated oven for 20 minutes.

                  Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

                    Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
