For the Beef Skewers:

1 lb (450g) lean beef sirloin, cut into 1-inch cubes

2 tbsp olive oil

2 tbsp soy sauce

2 tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

Salt and black pepper, to taste

1/2 tsp red pepper flakes (optional)

For the Peach Salsa:

2 ripe peaches, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Marinate the Beef: In a large bowl, combine the olive oil, soy sauce, balsamic vinegar, minced garlic, smoked paprika, oregano, salt, black pepper, and red pepper flakes. Add the beef cubes to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Peach Salsa: In a medium bowl, mix together the diced peaches, red onion, jalapeño, cilantro, and lime juice. Season with a pinch of salt and toss gently. Allow the salsa to sit for at least 15 minutes to let the flavors meld.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
