3 medium-sized beets, roasted and sliced

250g fresh burrata cheese

2 cups mixed greens (arugula and spinach work well)

1/4 cup walnuts, toasted and roughly chopped

1/4 cup pomegranate seeds

1/4 cup crumbled feta cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Fresh herbs (such as mint or dill) for garnish

Instructions
 

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes or until a fork easily pierces the beets. Allow them to cool, then peel off the skins and slice into rounds.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until combined. Adjust seasoning to taste.

      Assemble the Salad: In a large serving dish, start by laying down a bed of mixed greens. Arrange the sliced beets aesthetically over the greens.
