2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon chia seeds

1 teaspoon lemon juice

Pinch of salt

For the Parfaits:

2 cups Greek yogurt (plain or vanilla)

1 cup granola (your favorite variety)

Fresh berries for garnish (optional)

Mint leaves for garnish (optional)

Instructions
 

Make the Berry Chia Jam:

    - In a medium saucepan, combine the mixed berries and honey (or maple syrup) over medium heat.

      - Stir occasionally, breaking down the berries as they soften, for about 5-7 minutes.

        - Once the berries are softened and start to bubble, remove from heat. Stir in the chia seeds, lemon juice, and a pinch of salt. Mix well.

          - Allow the mixture to cool for about 30 minutes. It will thicken as it cools.

            Prepare the Parfaits:

              - In serving glasses or bowls, start by adding a layer of Greek yogurt at the bottom.

                - Top the yogurt layer with a generous spoonful of the berry chia jam.

                  - Sprinkle a layer of granola over the jam.

                    - Repeat the layers until the glasses are full, finishing with a layer of yogurt on top.

                      Garnish:

                        - Top the parfaits with additional fresh berries and mint leaves for a beautiful presentation.

                          Serve:
