1 cup coconut milk (canned or carton)

1/2 cup almond milk (or any milk of your choice)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 cup mixed berries (fresh or frozen; strawberries, blueberries, raspberries)

Toasted coconut flakes (for garnish)

Fresh mint leaves (for garnish)

Instructions
 

In a medium bowl, whisk together the coconut milk, almond milk, maple syrup, and vanilla extract until well combined.

    Add the chia seeds to the mixture, stirring to ensure they are evenly distributed. Let it sit for about 5 minutes.

      After 5 minutes, give the mixture another good stir to break up any clumps of chia seeds. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours (or overnight) until the chia pudding thickens.

        Once the chia pudding is ready, divide it evenly into serving glasses or bowls.

          Top each serving with a generous handful of mixed berries, allowing the beautiful colors to shine through.

            Sprinkle toasted coconut flakes over the top for added texture and flavor.
