2 cups all-purpose flour

2 cups granulated sugar

1 cup brown sugar, packed

1 cup vegetable oil

4 large eggs

2 cups finely grated carrots (about 4-5 medium carrots)

1 cup crushed pineapple, drained

1/2 cup unsweetened applesauce

1 cup walnuts or pecans, chopped

1 teaspoon vanilla extract

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract (for frosting)

Zest of 1 orange (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Mix Wet Ingredients: In another large bowl, beat the vegetable oil, granulated sugar, brown sugar, and vanilla extract until well combined. Add the eggs one at a time, mixing well after each addition.

        Combine Ingredients: In the wet ingredients bowl, add the grated carrots, crushed pineapple, and applesauce. Mix until fully incorporated. Gradually add in the dry ingredient mixture, stirring until just combined. Fold in the chopped nuts.

          Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

            Prepare Frosting: In a medium bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy. If using, add orange zest for an extra zing.

              Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.

                Garnish: Decorate the top with additional chopped nuts or carrot decorations if desired.
