Ingredients

3 ripe bananas, mashed (about 1½ cups)

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar (you can use brown sugar for a richer flavor)

1 large egg, beaten

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup walnuts or pecans, chopped (optional)

1/2 teaspoon ground cinnamon (optional)

1/4 teaspoon nutmeg (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan or line it with parchment paper for easy removal.

Mix the Butter and Bananas: In a large mixing bowl, combine the melted butter with the mashed bananas using a fork or a potato masher until well integrated and smooth.

Add Sugar and Egg: Stir in the sugar, beaten egg, and vanilla extract until well mixed.

Combine Dry Ingredients: Sprinkle the baking soda and salt over the mixture, then mix. Add the flour and fold it in gently. Be careful not to overmix; it's okay if there are a few lumps remaining.

Add Nuts and Spices: If you’re using nuts, cinnamon, or nutmeg, fold them into the batter now for added flavor and texture.

Pour into Pan: Pour the batter into the prepared loaf pan and use a spatula to smooth the top.

Bake: Place the pan in the preheated oven and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. You may need to cover the top loosely with aluminum foil if it starts browning too much.

Cool and Serve: Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy your heavenly banana bread!
