Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk, room temperature

3 large eggs, room temperature

1 tablespoon pure vanilla extract

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 cups fresh strawberries, hulled and chopped

1 cup whipped cream (for frosting)

½ cup strawberry preserves (for filling)

Fresh strawberries, for garnish

Instructions

Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cream Butter and Sugar: In a separate bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Incorporate Wet Ingredients: Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Then stir in the buttermilk and vanilla extract until fully combined.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing. Gently fold in the chopped strawberries.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare Strawberry Filling: While the cakes are cooling, you can prepare the strawberry filling. In a small bowl, mix the chopped strawberries with the strawberry preserves. Set aside.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread the strawberry filling evenly over the first layer, then carefully place the second layer on top.

Frost the Cake: Frost the top and sides of the cake with whipped cream. Use an offset spatula for a smooth finish, and feel free to pipe additional decorations on top if desired.

Garnish and Serve: Finish with fresh strawberries on top for garnish. Slice into pieces and serve chilled or at room temperature.
