Ingredients

3 cups whole wheat flour

1 cup rolled oats

1/4 cup honey

1 1/2 teaspoons salt

2 1/4 teaspoons active dry yeast (1 packet)

1 1/4 cups warm water (around 110°F or 43°C)

2 tablespoons olive oil

1 tablespoon unsweetened applesauce

1/4 cup sunflower seeds (optional for topping)

Instructions

Activate the Yeast: In a small bowl, combine the warm water and honey. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, rolled oats, and salt.

Combine Wet Ingredients: In another bowl, mix the activated yeast mixture, olive oil, and applesauce until well combined.

Form the Dough: Gradually add the wet mixture to the dry ingredients. Stir with a wooden spoon or a spatula until a shaggy dough forms.

Knead the Dough: Transfer the dough onto a floured surface and knead for about 8-10 minutes, until it becomes smooth and elastic. If it’s too sticky, add a little more flour as needed.

First Rise: Form the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or plastic wrap. Let it rise in a warm place for about 1-1.5 hours or until doubled in size.

Shape the Loaf: Once risen, punch down the dough to release the air. Turn it out onto a floured surface and shape it into a loaf by flattening it into a rectangle and rolling it up tightly.

Second Rise: Place the shaped loaf into a greased 9x5-inch loaf pan. Cover and let it rise for another 30-45 minutes, or until it rises just above the pan.

Preheat the Oven: Preheat your oven to 375°F (190°C) during the last 15 minutes of the second rise.

Optional Topping: If desired, sprinkle sunflower seeds on top of the loaf before baking.

Bake the Bread: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped. If the top browns too quickly, tent it with foil.

Cool: Once baked, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely before slicing.
