1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup sour cream

2 cups shredded cheddar cheese

1 package (8 oz) tortilla chips

1 cup sliced black olives (optional)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (for garnish, optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, breaking it up with a spoon. Drain any excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 5 minutes.

        Combine Ingredients: Stir in the black beans, corn, diced tomatoes, and taco seasoning. Allow the mixture to simmer for about 5 minutes, stirring occasionally.

          Layer the Casserole: In a 9x13 inch baking dish, layer half of the tortilla chips on the bottom. Spoon half of the meat mixture over the chips. Spread half of the sour cream on top, followed by a generous sprinkle of shredded cheddar cheese.

            Repeat Layers: Add another layer of the remaining tortilla chips, followed by the rest of the meat mixture, another layer of sour cream, and top it off with the remaining cheddar cheese and black olives (if using).

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let it cool slightly, then garnish with fresh cilantro and sliced jalapeños if desired. Serve warm and enjoy!
