Better-Than-Takeout Fruit Pizza

For the crust:

1 cup all-purpose flour

1/3 cup powdered sugar

1/4 cup butter, softened

1/2 tsp vanilla extract

1/4 tsp salt

1 egg

For the cream cheese frosting:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup whipped cream (or whipped topping)

For the fruit topping:

1 cup strawberries, sliced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 banana, sliced

1/2 cup mandarin oranges

Optional: mint leaves for garnish

For the glaze:

1/4 cup apricot jam

1 tbsp water

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, powdered sugar, softened butter, vanilla extract, salt, and egg. Mix until a dough forms. If the dough is too sticky, add a little more flour.

    Bake the crust: Press the dough into a greased pizza pan or baking sheet evenly (about 1/4 inch thick). Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden. Remove from the oven and let it cool completely.

      Make the frosting: In a medium bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream until fully combined and creamy.

        Assemble the pizza: Once the crust has cooled, spread the cream cheese frosting evenly over the crust, leaving a small border around the edge.

          Decorate with fruits: Arrange the sliced strawberries, kiwi, blueberries, banana slices, and mandarin oranges artistically over the frosted crust. Feel free to create your own patterns or designs!

            Prepare the glaze: In a small saucepan over low heat, combine apricot jam and water. Stir until smooth and heated through, then remove from heat.

              Glaze the fruit: Using a pastry brush, carefully brush the glaze over the fruits to give them a shiny finish and keep them fresh.
