2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling (plus extra for topping)

2 cups chocolate wafer cookies (about 24 cookies)

1/2 cup dark chocolate shavings (for garnish)

Fresh cherries with stems (for garnish)

Prepare the Whipped Cream: In a large mixing bowl, use a handheld or stand mixer to beat the heavy cream on medium speed until it begins to thicken. Add the powdered sugar and vanilla extract, then whip on high speed until stiff peaks form. Be careful not to overwhip.

    Layer the Cookies and Cream: On a serving platter or in a rectangular dish, start with a layer of chocolate wafer cookies. You can either dip the cookies briefly in cherry juice for added flavor or lay them dry. Spread a layer of the whipped cream mixture over the cookies, followed by a layer of cherry pie filling.

      Repeat Layers: Continue this process, layering cookies, whipped cream, and cherry pie filling until all ingredients are used up. Ideally, finish with a generous layer of whipped cream on top.

        Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 4–6 hours, or overnight if possible. This allows the cookies to soften and flavors to meld together, creating a delicious icebox cake.

          Garnish and Serve: Just before serving, remove the cake from the refrigerator. Garnish the top with dark chocolate shavings, additional cherry pie filling, and fresh cherries for a beautiful presentation.
