2 pounds pork tenderloin

1 cup fresh blackberries (plus extra for garnish)

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Salt and pepper, to taste

Optional: Chopped fresh parsley for garnish

Marinate the Pork: In a mixing bowl, combine balsamic vinegar, honey, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Whisk until well combined. Add the pork tenderloin to a large resealable plastic bag or shallow dish, then pour the marinade over the pork, ensuring it is well coated. Seal or cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Prepare the Blackberry Sauce: In a medium saucepan, combine the fresh blackberries, remaining balsamic vinegar, honey, and a pinch of salt. Cook over medium heat, gently smashing the blackberries with a wooden spoon as they break down. Simmer for about 10-15 minutes until the sauce thickens and reduces slightly. Remove from heat and set aside.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: Heat a large oven-safe skillet over medium-high heat. Remove the pork from the marinade (discard the marinade) and sear the pork tenderloin in the skillet for about 2-3 minutes on each side until golden brown.

          Roast the Pork: Move the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Glaze the Pork: After removing the skillet from the oven, brush the blackberry sauce over the pork tenderloin, reserving some for serving. Let the pork rest for about 5-10 minutes before slicing.

              Serve: Slice the pork into medallions and drizzle with the remaining blackberry sauce. Garnish with additional blackberries and chopped parsley if desired.
